Look for the true ‘Classic’ eggplant producing large, 4″ wide by 9″ long, teardrop shaped fruits of glossy, black-purple skin and tender flesh, and the finger-like, purple and white ‘Hansel’ and ‘Gretel’ varieties. Excellent growers for many Mediterranean dishes including eggplant parmesan, ratatouille, sautéed in pasta, grilled and diced fresh in salsas and relishes.

CARE NOTES:
Maturity – 55 – 85 Days

Grow in sunny, well-drained, nutrient-rich soil or containers.

Water well after planting – maintain 1” – 2″ of water once a week throughout the growing season. 

Feed with a slow-release fertilizer during the growing season.

Mulch 2″ to suppress weeds, retain moisture, and protect against extremes of soil temperature.

Plant 10-12 inches apart. Stake, cage or trellis for the best yields. Prefers consistent soil moisture.
